I don’t know about you, but this Coronavirus pandemic has been having me in the kitchen about 50x more since we were first quarantined. And, once my usual ingredients started to run out, I had to get creative. It’s like they say, necessity is the mother of invention.
I’ve subbed ketchup for tomato paste, Worcestershire for BBQ sauce, mayo for egg whites. Whatever it takes to 1) use up what we have in the pantry and fridge while being resourceful and 2) keep us out of the grocery store and public as much as possible. However, with veggies out of stock in the fridge and fresh produce and herbs running low in our supply, it’s been challenging to say the least to come up with hearty, filling meals.
Kevin’s Natural Foods Keto-friendly Sauces
Which is why I was so excited when Kevin’s Natural Foods reached out to me and asked if I’d like to review their products. If any of y’all reading are B&C advocates, you know that I don’t review just any brand that comes my way. I do my homework, ask questions, and REALLY review whether or not I will use them again in my ketogenic lifestyle (on that note, check out all of my favorite Keto products HERE, tried and vetted by yours truly before making the cut).
So, let me start by saying: after I tried out Kevin’s Natural Foods sauces, I immediately went online and ordered more. Why? I’ll get into it a little more in depth in this recipe, but let me break it down quickly for the TL, DR folks out there:
- They’re paleo- and keto-friendly! Yay! It’s so hard to find ready-to-heat sauces that are truly keto approved
- They’re absolutely delicious
- They’re shelf stable for MONTHS and can be frozen for beyond that – perfect for those of us in quarantine who need stable food options
- They’re so easy to use – they’ve helped me have dinner ready in 30 minutes WITH sides!
- They’re stocked and easily available to order
- They’re versatile – I’ve used some of their sauces on different meats for a completely new dish
If you’re not convinced by now then I might guess being isolated is going to your head. 😉 However, never fear. Read on and check out the recipe video to see just how easy these sauces really are.
Keto Lemongrass Basil Chicken Recipe with Cauliflower Turmeric Rice
So, my goal for this dish was to use ingredients that are either shelf stable or can be frozen for longer. Why? I don’t know about you, but produce and dairy run out quickly in our fridge each week. We are trying to limit our trips to the grocery store and stay at home to do our part to flatten the curve, so that leaves meals with shelf-stable ingredients on the table.
This keto chicken dinner recipe includes the following ingredients:
- 2 chicken breasts, cubed into 1-inch, bite-sized pieces – I like to buy the large family packs from my local grocery store and chop them all up into cubes, storing 2 breasts to each freezer bag. That way, they’re prepped and ready to go for my meals when I need them. They also tend to thaw more quickly when they’re chopped up this way.
- Kevin’s Natural Foods – Lemongrass Basil Sauce – This stuff is tangy, zesty, and so versatile! I used it with turmeric cauliflower rice, but you could easily work this into a stir fry, or serve with grilled veggies. Whatever you have on-hand will work!
- Olive Oil – to get things going for the meat, all you need is a little oil. I opted for olive oil because I like the flavor, but you could use any heat-safe oil.
That’s it for the chicken portion! Easy peasy. Just a few ingredients, and in about 10 minutes you’ll have a complete main dish ready!
Let’s talk ingredients for the low-carb turmeric cauliflower rice:
- Riced Cauliflower – Fresh or frozen will work, but for this recipe, I used frozen as that’s what I was able to find at the grocery store. I personally am a huge fan of Green Giant Riced Veggies Cauliflower. If you’re feeling up to in and have fresh produce in your fridge, you can absolutely rice your own cauliflower for this recipe!
- Sesame Oil – the sesame oil pairs well with the flavors in this rice, as well as the lemongrass in the chicken. If you don’t have sesame oil you can substitute olive oil or butter, but note that it will change the flavor of the dish.
- Turmeric – I try to work turmeric into my cauliflower whenever possible because of its anti-inflammatory properties. Cauliflower tends to make people bloat, so I appreciate anti-inflammatory ingredients to help balance the meal.
- Ginger – Normally I would take the time to thaw some of the ginger in my freezer and grate it fresh for these types of dishes, but again we are going with as many shelf-stable ingredients as possible for those who have bare grocery stores at the moment, and quick and fast to get it on the dinner table as soon as possible. You can absolutely sub out fresh ginger if you have it on-hand—it will taste even richer if you do!
Keto-friendly Recipes for Quarantine
I’m not saying this just because Kevin’s Natural Foods sent me products to try—I really like this stuff. It came in so handy during this time where going to the grocery store can be difficult and finding all the ingredients for an elaborate meal even harder. I’ll be reviewing their classic taco sauce next which, just like this lemongrass basil sauce, I immediately reordered.

Lemongrass Basil Chicken with Turmeric Cauliflower Rice
Equipment
- Skillet
- Silicone Tongs
- Sauté pan
Ingredients
Lemongrass Basil Chicken
- 2 chicken breasts cubed into bite-size pieces
- 1 package Kevin's Natural Foods Lemongrass Basil Sauce*
- 1 tbsp olive oil
Turmeric Cauliflower Rice
- 1 package Green Giant Riced Veggies Cauliflower** roughly 2 1/4 cups riced cauliflower
- 1/2 tsp turmeric powder
- 1/2 tsp ground ginger
- 1 tbsp sesame oil
Instructions
- Place a skillet over medium heat and add sesame oil.
- When the oil is nice and hot, add riced cauliflower and break up any chunks. Mix cauliflower so it is evenly coated with the oil.
- Cook the cauliflower rice until it is nice and tender, stirring frequently to keep it from browning.
- Mix in turmeric powder, ground ginger, and salt and pepper. Stir until evenly blended then set aside.
- Warm a separate sauté pan over medium-high heat and add olive oil. Swirl pan to coat the surface.
- When the oil is hot, add chicken and spread out evenly.
- Cook chicken for about 3 minutes on each side.
- Continue cooking chicken, using tongs to flip occasionally, until chicken is browned and cooked completely—about 10 minutes total.
- Add in Kevin's Natural Foods sauce and stir to coat evenly. Let it simmer a few minutes to incorporate all the flavors and to allow the sauce to reduce and thicken.
- Serve chicken over cauliflower rice and top with some chopped parsley for garnish. Enjoy!

- This recipe is versatile—try cutting the chicken into strips instead of bite-size pieces, or subbing the chicken for pork!
- This recipe can be made with fresh or frozen cauliflower rice! Make sure to stir frequently if you’re using fresh rice to prevent any burning. Or, switch things up by using florets, instead!
